Sizzling <em>khorovats<\/em>, or skewers of meat, are seasoned and marinated before being barbecued over a gentle flame. These are then placed in a clay oven or cooked on a revolving vertical spit.<\/p>\r\n\r\n\r\n\r\n<p><em>Khorovats<\/em> are commonly made with pork, lamb or chicken and a simple mix of fresh herbs and spices. Deceptively simple, barbecued <em>khorovats<\/em> pack a lot of flavour and can be enjoyed on the hop as a tasty fast food option. Or, of course, over a long, leisurely lunch with salads, dips and baskets of <em>lavash<\/em> (see below).<\/p>\r\n\r\n\r\n\r\n<h3 class=\"wp-block-heading\"><strong>2. \u00a0Huge variety of fresh fruit and vegetables<\/strong><\/h3>\r\n\r\n\r\n\r\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" width=\"1024\" height=\"576\" class=\"wp-image-18517\" src=\"https:\/\/www.trafalgar.com\/real-word\/wp-content\/uploads\/\/2020\/03\/apricots-PVKFQ3H-1024x576.jpg\" alt=\"Apricots\" srcset=\"https:\/\/www.trafalgar.com\/real-word\/wp-content\/uploads\/2020\/03\/apricots-PVKFQ3H-1024x576.jpg 1024w, https:\/\/www.trafalgar.com\/real-word\/wp-content\/uploads\/2020\/03\/apricots-PVKFQ3H-330x186.jpg 330w, https:\/\/www.trafalgar.com\/real-word\/wp-content\/uploads\/2020\/03\/apricots-PVKFQ3H.jpg 1440w\" sizes=\"(max-width: 1024px) 100vw, 1024px\" \/><\/figure>\r\n\r\n\r\n\r\n<p>Armenia&#8217;s climate, geography and rich, volcanic soil lends itself to agriculture. Think mountain pastures, orchards and vineyards \u2013 and the freshest produce this side of the Caucasus Mountains.\u00a0<\/p>\r\n\r\n\r\n\r\n<p>A visit to an Armenian <em>shuka<\/em> (market) will reveal stalls crammed with an astonishing variety of fruits, berries, and vegetables. Make sure to sample some traditional preserves and local honey, while a glass of fresh pomegranate juice is an absolute must!<\/p>\r\n\r\n\r\n\r\n<p>Although Armenia produces a range of delicious fruit (for example, cherries, apples, grapes, figs, pomegranates and pears), it is most famous for the humble apricot. \u00a0It is said that Armenia&#8217;s golden apricot captures the soft rays of the Armenian sun, so it bursts with flavour, aroma and a history harking back to biblical times.\u00a0 \u00a0<\/p>\r\n\r\n\r\n\r\n<p>In winter, one of the most popular Armenian dishes is <em>Ghapama<\/em>. The word &#8216;<em>ghapama<\/em>&#8216; literally means &#8216;cooked in a covered pot&#8217;. But the name refers to a slow-roasted pumpkin that has been scooped out and stuffed to the brim with rice and dried fruit. The result is an aromatic, sweet and moreish seasonal dish of epic proportions.<\/p>\r\n\r\n\r\n\r\n<h3 class=\"wp-block-heading\"><strong>3. This means the locals can trace their recipes back for centuries, and nowhere is this truer than with Armenian bread. \u00a0<\/p>\r\n\r\n\r\n\r\n<p>These are just three of our favourites:<\/p>\r\n\r\n\r\n\r\n<ul class=\"wp-block-list\">\r\n<li><strong>Lavash<\/strong>: It&#8217;s difficult to describe <em>lavash<\/em>, possibly because it differs from region to region. In these parts, however, the locals bake <em>lavash<\/em> on the wall of a <em>tonir<\/em> (a traditional Armenian oven). This flatbread is perfect for mopping up dips and sauces, but also to wrap sizzling <em>khorovats<\/em> or as a ubiquitous side for most Armenian food.\u00a0<\/li>\r\n<li><strong>Gata<\/strong>: Armenia&#8217;s bread-like cake (or cake-like bread), is an exotic, sweet and syrupy tea-time treat. Similar to brioche, it is the perfect accompaniment to a strong cup of Armenian coffee, and you&#8217;ll find yourself craving a slice long after you leave.<\/li>\r\n<li><strong>Lahmajoun<\/strong>: A traditional Armenian flatbread, <em>Lahmajoun<\/em> is topped with spiced meat, crushed tomatoes and a handful of fresh herbs. Think of it as an &#8216;Armenian pizza&#8217; \u2013 and it&#8217;s fast food at its finest. \u00a0<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<h3 class=\"wp-block-heading\"><strong>4.\u00a0 <em>Dolma<\/em>,<\/strong> <strong><em>kyufta<\/em> and <em>manti<\/em> and are all delicious Armenian staples<\/strong><\/h3>\r\n\r\n\r\n\r\n<figure class=\"wp-block-image size-large\"><img loading=\"lazy\" decoding=\"async\" width=\"1024\" height=\"576\" class=\"wp-image-18519\" src=\"https:\/\/www.trafalgar.com\/real-word\/wp-content\/uploads\/\/2020\/03\/dolma-stuffed-grape-leaves-with-rice-and-meat-on-6SEJEU6-1024x576.jpg\" alt=\"Vine leaves Dolmades - Armenian food and dishes\" srcset=\"https:\/\/www.trafalgar.com\/real-word\/wp-content\/uploads\/2020\/03\/dolma-stuffed-grape-leaves-with-rice-and-meat-on-6SEJEU6-1024x576.jpg 1024w, https:\/\/www.trafalgar.com\/real-word\/wp-content\/uploads\/2020\/03\/dolma-stuffed-grape-leaves-with-rice-and-meat-on-6SEJEU6-330x186.jpg 330w, https:\/\/www.trafalgar.com\/real-word\/wp-content\/uploads\/2020\/03\/dolma-stuffed-grape-leaves-with-rice-and-meat-on-6SEJEU6.jpg 1440w\" sizes=\"(max-width: 1024px) 100vw, 1024px\" \/><\/figure>\r\n\r\n\r\n\r\n<p>Armenia&#8217;s strong Mediterranean influences mean that visitors to this land-locked gem of a country could still recognise a number of Armenian dishes. Look out for:<\/p>\r\n\r\n\r\n\r\n<ul class=\"wp-block-list\">\r\n<li><strong><em>Dolma<\/em><\/strong>: Pronounced &#8216;tolma&#8217; in Armenia, dolma refers to tender vine or cabbage leaves filled with minced pork or beef, onion, rice and vegetables.<\/li>\r\n<li><strong><em>Kyufta<\/em><\/strong>: Many Middle Eastern countries have their own version of the classic <em>kofta<\/em>, and Armenia is no different. The locals roll the mince, spices and onion into a tapered &#8216;spinning top&#8217; shape before cooking them in a light broth \u2013 with a dash of pomegranate molasses.\u00a0<\/li>\r\n<li><strong><em>Manti<\/em><\/strong>: Similar to Polish <em>pierogi<\/em>, these dainty dumplings are filled with meat and baked until crisp. In fact, Sevan trout is world-famous and visitors flock to the banks of the lake to enjoy <em>Ishkhan <\/em>while soaking up the region&#8217;s beautiful views.<\/p>\r\n\r\n\r\n\r\n<p><em>Ishkhan<\/em> means &#8216;prince&#8217; in Armenian, but in Armenian food terms, it refers to trout cooked in a variety of different ways. The locals may pan-fry, bake in parchment or stuff it with almonds and apricots. They unearthed fermentation vessels, cups, vines and seeds, as recently as 2017, indicating that wine was produced in the region 6000 years ago.<\/p>\r\n\r\n\r\n\r\n<p>Today, visitors can taste deep, deliciously luscious <a href=\"http:\/\/armenia.travel\/en\/winemaking-in-armenia-the-revival-of-an-ancient-tradition\" target=\"_blank\" rel=\"noreferrer noopener\" aria-label=\" (opens in a new tab)\">Armenian wine<\/a> in a number of wineries (including Areni winery). And for something different?
