He says, <em>\u201cMy favourite place to take our guests is Sicily. I love showing them Sicily because I am Sicilian \u2013 so I&#8217;m showing off my home \u2013 but also because Sicily is an island where cultures have merged over 2500 years. It isn&#8217;t too much of a mainstream tourist destination, so it&#8217;s very much still possible to enjoy meeting the local people and tasting the delicious food they prepare.\u201d<\/em><\/p>\n\n\n\n<p><p>This recipe is classic Sicilian fare, best enjoyed with a refreshing Aperol Spritz. <em>\u201cWhat makes this recipe so special is that it&#8217;s easy to make, uses fresh, simple ingredients and is good for every season!\u201d<\/em><\/p><\/p>\n\n\n\n<p><p>You will need:<\/p><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li><p>350 grams\/12 oz. Fresh Tomatoes<\/p><\/li><li><p><span style=\"font-size: inherit\">30 grams\/1 oz Washed Fresh Basil<\/span> <\/p><\/li><li><p>30 grams\/1 oz Peeled almonds<\/p><\/li><li><p>2 tbs Parmesan or Pecorino Romano <\/p><\/li><li><p>2 Cloves of Fresh Garlic<\/p><\/li><li><p>Extra Virgin Olive Oil Salt<\/p><\/li><li><p>Linguine or Penne Rigate &nbsp;<\/p> <strong style=\"font-size: inherit\">Method:<\/strong> <p><strong>1 \u2013<\/strong> Pop your tomatoes in boiling water for around a minute<\/p><strong>2 \u2013<\/strong> Drain tomatoes, peel, and remove seeds and excess juices. <p><strong>3 \u2013<\/strong> Add the tomatoes, basil, almonds, cheese and garlic to your blender<\/p><strong> 4 \u2013<\/strong> Pour in around \u201cone finger&#8217;s worth\u201d of extra virgin olive oil to your blender <p><strong>5 \u2013 <\/strong>Add an ice cube (if your blender has a strong blade) and blend until smooth<\/p> <strong>6 \u2013<\/strong> Cook your chosen pasta in boiling salted water, whilst warming your pesto in a separate pan. <p><strong>7 \u2013<\/strong> A few minutes before the pasta is ready, drain, add warmed pesto and a little boiling water<\/p> <strong>8 \u2013<\/strong> Stir and toss until pasta is ready <p><strong>9 \u2013<\/strong> Serve topped with a few cherry tomatoes and some fresh basil leaves<\/p><\/li><\/ul>\n","protected":false},"excerpt":{"rendered":"<p>Giuseppe is part of our Italian team of Travel Directors, and has been in the Trafalgar family since 2017.
