The first Burns Supper was held in July 1801. Nine of Robert Burns\u2019 close friends gathered to mark the fifth anniversary of their friend\u2019s death. They held the supper at Burns Cottage <\/a>in Alloway and ate haggis, performed Burns\u2019 poems, and made a speech in honour of the great Rabbie Burns. What happens at a Burns Supper?<\/strong><\/h2>\n\n\n\n

Every Burns Supper is unique but many traditions are the same. It usually begins with everyone saying the Selkirk Grace before tucking into the delicious feast, washed down with drams of whisky. After the starters, it\u2019s time for the piping in of the haggis. A piper leads the haggis into the dining room, beginning the performance of Robert Burns\u2019 iconic poem \u2018Address tae a Haggis\u2019 (Address to a Haggis). The haggis is toasted, then served with neeps and tatties, skirlie, rumbledethumps, and sometimes Balmoral chicken. <\/p>\n\n\n\n

After the meal, the guests perform the first Burns recital and the Immortal Memory (the tribute speech to Burns). Then, the second Burns recital is performed, there\u2019s a Toast to the Lassies, and a Reply Toast to the Lassies. Finally, they perform the Great Bard\u2019s last recital. At the end of the night, everyone stands and sings Burns\u2019 poem Auld Lang Syne<\/a>, joining hands as they sing the line \u2018And there’s a hand, my trusty fere!\u2019. While this is a classic rundown of events at a Burns Supper, you can include whatever additions you like. Traditional starters usually include a flavourful soup like Cock-a-Leekie (chicken, leek and rice) soup, Cullen Skink (smoked haddock chowder), or homemade Scotch broth or barley broth. <\/p>\n\n\n\n

Mains<\/h3>\n\n\n\n

No Burns Supper is complete without haggis. Whether you love it or loathe it, the haggis is the star of the show on Burns night. Whether you bake it or boil it, or even try a vegetarian version, you\u2019ve got to have haggis. Robert Burns himself described it as ‘the great chieftain o’ the puddin’-race’. <\/p>\n\n\n\n

Side dishes<\/h3>\n\n\n\n

Neeps and tatties (turnips and potatoes) are the traditional side dish to the haggis. They’re usually served mashed, pairing beautifully with the oaty haggis. You don\u2019t need anything too fancy here – just a sprinkle of seasoning and a knob of butter and you\u2019re good to go. Other traditional sides include rumbledethumps (cabbage, potatoes, and onions), and Balmoral chicken.<\/p>\n\n\n\n

Dessert<\/h3>\n\n\n\n

It wouldn\u2019t be a Burns Night supper without the famous Cranachan. This boozy Scottish trifle is a dreamy raspberry, cream, oatmeal and whisky concoction, and it\u2019s the perfect way to end your meal. If you\u2019re after more sweet dessert options, you can try a traditional Clootie Dumpling (steamed fruit pudding), a Selkirk Bannock (fruit loaf), Scottish shortbread<\/a> biscuits, bon bons, Ecclefechan tarts, a Bramble trifle, or Scottish Tablet (like fudge but better). <\/p>\n\n\n\n

Drinks<\/h3>\n\n\n\n

The drinks flow throughout the Burns Night supper and it\u2019s usually a traditional Scottish whisky<\/a> uniting the meal. It\u2019s tradition to pour a dram over the haggis while whiskey is also mixed into the Cranachan\u2026 And it\u2019s likely also in your drinking glass! Malt whiskey is a classic choice, but if you\u2019re not a fan of straight spirits, you can also make cocktails. We love a classic whiskey sour cocktail made with Bourbon, egg whites and lemon juice.<\/p>\n\n\n\n
