It&#8217;s this intrinsic connection to ancient culture, more recent influences, and the land, that has helped give Yucat\u00e1n food its individuality.<\/p>\n<p>Smoked meats with Habanero chillies, the peppery <em>Achiote<\/em> spice, and sour orange are often thought to be the region&#8217;s key flavours. <em>Pibil<\/em> is perhaps the best reflection of this, originating from when meat was preserved by being rubbed with spices and smoked to last longer in the tropical climate. Alternatively, visitors can try <em>Panucho<\/em>, a refried tortilla stuffed with refried black beans, lettuce, pulled chicken or turkey, pickled red onion, avocado and pickled jalape\u00f1o pepper.
