Follow Catherine&#8217;s cheese scone recipe and sit back, relax and dream of Ireland. <\/p>\n\n\n\n<p><em><strong>GET INSPIRED: <a href=\"https:\/\/www.trafalgar.com\/tours\/amazing-ireland?season=summer+2023\">Visit Ballyknocken House, Farm &amp; Cookery School with Trafalgar<\/a><\/strong><\/em><\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-easy-scones-recipe\">Easy scones recipe<\/h2>\n\n\n\n<p>2 tbsp butter (for frying)<\/p>\n\n\n\n<p>60g leek, very finely sliced<\/p>\n\n\n\n<p>225g plain flour<\/p>\n\n\n\n<p>1 tsp baking powder<\/p>\n\n\n\n<p>1\/2 tsp bicarbonate of soda<\/p>\n\n\n\n<p>1\/2 tsp salt<\/p>\n\n\n\n<p>1 tbsp sugar<\/p>\n\n\n\n<p>50g butter, cold, cut into pieces<\/p>\n\n\n\n<p>50g grated Irish cheddar cheese<\/p>\n\n\n\n<p>150g natural yogurt<\/p>\n\n\n\n<p>\u00bd tsp fresh thyme<\/p>\n\n\n\n<p>Egg glaze<\/p>\n\n\n\n<p><\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-how-to-make-the-perfect-farmhouse-food\">How to make the perfect farmhouse food<\/h2>\n\n\n\n<p><\/p>\n\n\n\n<p>Preheat the oven to 250\u02daC\/ Fan 220 \u02daC \/ 400\u02daF \/ Gas 6<\/p>\n\n\n\n<p>Heat the butter in a frying pan and cook the leek for 5 minutes until soft, without browning. Remove the leek and place on kitchen paper to absorb the excess butter.<\/p>\n\n\n\n<p>Sieve together into a large bowl the flour, baking powder, bicarbonate of soda, salt and sugar. Then rub in the butter.<\/p>\n\n\n\n<p>Stir in the leek together with the cheese and thyme.<\/p>\n\n\n\n<p>Mix in the yogurt but keep a little back and only add it if the mixture is very dry &#8211; the dough should be a bit sticky but not wet.<\/p>\n\n\n\n<p>Transfer to a floured surface and lightly knead for a few seconds. Pat it out until it is about 2\u00bd cm thick.
