It\u2019s made from simple, fresh ingredients: homegrown tomato, stale Tuscan white bread, basil, garlic, leek, chili and a drizzle over Anna\u2019s exquisite Extra Virgin Olive Oil<\/a>.<\/p>\n\n\n\n

Castle Del Trebbio\u2019s Tuscan tomato soup recipe<\/strong><\/h2>\n\n\n\n

Ingredients:<\/strong><\/p>\n\n\n\n

    \n
  • 250 gr\/ 9oz stale white Tuscan bread<\/li>\n\n\n\n
  • 1litre\/ 1 \u00be pts good stock<\/li>\n\n\n\n
  • 500 grammes\/ 1lb of ripe tomatoes or very good tinned tomatoes<\/li>\n\n\n\n
  • One leek<\/li>\n\n\n\n
  • \u2018Pepperoncino\u2019 (small chili peppers)<\/li>\n\n\n\n
  • Fresh Basil<\/li>\n\n\n\n
  • Extra Virgin olive oil<\/li>\n\n\n\n
  • Salt<\/li>\n<\/ul>\n\n\n\n

    Cooking instructions<\/strong><\/p>\n\n\n\n

      \n
    • In a large saucepan: saut\u00e9 the chopped leek with the pepperoncino in 6 tablespoons of the olive oil.<\/li>\n\n\n\n
    • As soon as the leek looks cooked, toss in the peeled tomatoes and nice bunch of the fresh basil, all roughly chopped.<\/li>\n\n\n\n
    • Bring it to the boil at a medium heat and after 5 minutes add the stock.<\/li>\n\n\n\n
    • Season with salt and when the ingredients start to bubble again, add the thinly sliced, (slightly stale) white Tuscan bread.<\/li>\n\n\n\n
    • Cook for a further 5 \u2013 10 minutes.<\/li>\n\n\n\n
    • When the bread has soaked well, turn off the heat and wait for the bread to soften. Then, with the help of a spoon, divide the bread into small pieces, reducing it to gruel.<\/li>\n\n\n\n
    • Let the \u2018pappa\u2019 rest for about 1 hour.<\/li>\n\n\n\n
    • Serve the dish hot or cold and add a few drops of extra virgin olive oil on top.<\/li>\n<\/ul>\n\n\n\n
